Good selection.

I did play Omega Boost, but I could not get into it.

My mentions are:

Rival Schools - fantastic 1 on 1 fighter with great creative animations and an addictive fighting system. Overshadowed by Tekken.
Syphon Filter - Gabe Logans run cycle is brilliant! A good action packed and intense game that needs a lot of skill. Overshadowed by Metal Gear solid.
Vagrant Story - plays a similar to the unreleased Parasite Eve (only came out in Japan and US). A very deep game which is pretty damn hard. Lovely artwork and a rather dark theme.
Kurushi (Intelligent Cube)- an amazing puzzle game. One of those games I look at and wished that I had came up with that idea!

I wont go into the imports as there are far too many to list. I also played a lot of RPG's.

Ah cool.  I liked Omega Boost but not many of those other games, other than Ridge Racer Type 4 which I still play from time to time even in this age (it's one of about 30 games I have as a PS1 Classic on my PS3).  I still think it looks pretty good considering that the vast majority of 3D games on PS1 look like absolute garbage now and the 2D games often still look pretty good.

A couple of my favourites that don't seem to have as much fame as other PS1 games (I'm not really sure what underrated means here since most of the games mentioned got high review scores at the time they came out):
Bloody Roar 2 - the fighting game that got the most play between me and my friends since Street Fighter II on SNES.  It was so much fun and very satisfying to play too.  We never liked Tekken.   Also it was a strange one since my friends pointed out that one of the characters looked very much like I did at the time.
Ghost in the Shell - Fun game based on the anime and had well done cutscenes I often didn't skip (which is a rare thing for me) and I enjoyed being able to move my lil mech thing all over the walls and ceilings.   It's the only game on my list that I don't have on PS3.  (I guess the expired license rights prohibit a re-release).
Grandia - I generally hate RPG's and them boring as all heck (especially Final Fantasy VII) but I tried this one way back in the late 90's and actually really enjoyed it.   Again I've got it on my PS3 in the PS1 folder and play it from time to time.   Never finished it though (I bought the UK version on PSN forgetting it was the US version I originally owned and thus my original PS1 save file wouldn't work on it so I started over only for my then PS3, a second hand machine, to yellow light and lose all my progress and then I bought the US version of the game when I had left over dollars when buying some US exclusive games on my US account and continuing from my original save file about 15 years later...).
Herc's Adventures - Action RPG that I didn't actually know about during the PS1 era and was just told about in the past year by someone on Pixel Joint and so I downloaded it off the US PSN store and really quite enjoyed it.  Bit like The Story of Thor on Mega Drive.
Future Cop LAPD - I actually thought this was a mediocre shooter when I first bought it and didn't play it again for ages, but then I gave it another shot when I was bored of everything else and I really got into it (that same thing happened to me with The Warriors on PS2 in that I also bought that and didn't think much of it til a few months later whereupon it soon became my absolute fave game on PS2 and PSP and one I still play often).

I got a few other PS1 faves (Crash Team Racing and Symphony of the Night for example) but I think those above count as ones a lot of people haven't played.
Favorite CPC games: Count Duckula 3, Oh Mummy Returns, RoboCop Resurrection, Tankbusters Afterlife
