This may sound like a daft question but is there any way to convert a French Azerty Plus to Qwerty? Would it be possible to physically remove the keys, for instance, and rearrange them? What would then need to be done in terms of mapping? I'm sure I also read that a UK ROM could be used on a C4CPC. Or is this sort of work sacrilege?
The keys have different shapes for each row, so swapping keys makes the keyboard uneven. Many people just get stickers made and "over-write" the original letters. As for mapping, that's contained in the cartridge, so just use a UK cartridge.

Couldn't find also a qwerty keyboard and I swapped the keys.
Also replaced the rom (M4) but feels weird.

As Bryce said the keys are different and don't much physically with the others on the same row.
But take a look at my Amiga, the Z key.
I did a similar thing to her...

Yes, it's because the keyboard is curved, not flat.

Speaking about Plus, right ?
There are several conversion instructions to put a 6128 (non plus) keyboard into a plus.
This is reversible, I did this with mine and it is not a big issue.
